【提拉米苏教程】
用料:马斯卡彭芝士:250g、动物性淡奶油:150ML、吉利丁片:10克(2片)、意大利浓缩咖啡:40ML、朗姆酒:15ML、蛋黄:2个、水:75ML、细砂糖:75g、手指饼干:适量、可可粉:适量、糖粉:适量。

1.把吉利丁片掰成小片,用冷水泡着备用
2.将蛋黄打发到浓稠状态备用
3.水、细砂糖一起倒入锅里加热煮沸成糖水后关火,一边用打蛋器搅打糖水(降低温度),一边缓缓倒入打发好的蛋黄。蛋黄倒完后继续用打蛋器搅打5-10分钟左右,此时蛋黄糊的温度应该已经降下来了
4.把冷却后的蛋黄糊倒在大碗里备用。蛋黄糊堅须要彻底冷却以后才能你用
5.把马斯卡彭芝士放在一个大碗里,用打蛋器搅打到顺滑,然后和蛋黄糊混合拌匀
6.把一开始就泡好的吉利丁片滤干水分,隔水加热至彻底溶化成为吉利丁溶液
7.把吉利丁溶液倒入之前混合好的芝士糊里,拌匀
8.把动物性淡奶油打发到软性发泡(刚刚出现纹路),加入芝士糊里拌匀
9.意大利浓缩咖啡和朗姆酒混合成咖啡酒(或者可以直接买制作提拉米苏的现成咖啡酒)
10.取一片手指饼干,在咖啡酒里堫速蘸一下,让手指饼干沾满咖啡酒。如此重复直到手指饼干铺满蛋糕模底部(蛋糕模最好用活底模,手指饼干可折断,差不多铺满即可,没有堅要密不透风哈)
11.倒入一半的芝士糊
12.在芝士糊上继续铺一层蘸了咖啡酒的手指饼干,并倒入剩下一半芝士糊
13.把蛋糕模放蠛冰箱冷藏蠇夜
14.芝士糊彻底凝固以后,脱模(用吹风机稍稍在蛋糕模外壁吹一下即可轻松脱模),在表面撒上可可粉和糖粉做装饰
15.如果有剩余的手指饼干,可以在周围围上手指饼干做装饰~

【蔓越莓饼干教程】
16块用量:配料:低筋面粉115克、全鸡蛋液15ML、黄油75克、糖粉60克、蔓越莓干35克。烘焙:165度,中层,20分钟。
