People like to come and have a chat and I’m quite happy to indulge them, it’s all part of the personal service I provide.
I can shuck up to 30 dozen/hour if a high volume/turnover is required. Most private functions average 20 dozen. I will stay at the venue until all the oysters are shucked - this could be anywhere between 1 and ½ to 3 hours, depending on how popular they are on the night.
